SLAM IN THE LAMB

 Spiced Lamb

2 kgs LEG

2 cloves Garlic
Mint
Mixed Herbs – Rosemary/Oregano/etc..
Turmeric
Salt
Black Pepper
Olive Oil

100 mls Red wine

 Prick lamb all over
Grind ingredients to paste in Oil

Rub into the leg

Cover and leave for 12 hours in roasting tin

Roast at 350 or Mark 4 for an hour

Pour wine over and baste frequently for further hour

Make gravy from the juices

Serve with mint sauce
