 2lbs MIXED DRIED FRUIT
1/4lb BLANCHED ALMONDS
1/4lb CANDIED PEEL
1/4lb GLACE CHERRIES

1 LEMON/ 2 LIMES

1 ORANGE

1/2 lb FLOUR

1/2 lb BREAD CRUMBS
1/2lb SUGAR
1lb CHOPPED SUET ( BEEF FAT)

8 EGGS
1/2 PINT STOUT OR GLASS OF BRANDY
1/4 PT MILK
Pinch Salt

1 Teaspoon Mixed Spice

 

WASH  FRUIT & DRY
CHOP NUTS, PEEL AND CHERRIES
MIX WITH FRUIT
ADD GRATED RIND
PUT DRY INGREDIENTS IN A LARGE BOWL ADD FRUIT AND EGGS,STOUT,MILK TO GIVE “DROPPING” CONSTISTENCY.

GREASE 3/4  FILL BASINS
BOIL WATER IN LARGE SAUCEPAN

COVER WITH GREASED PAPER AND TIE THIN CLOTHS
PUT PUDDINGS TO STEAM FOR 5 HOURS ( 8 FOR LARGER BOWLS)
COOL WHEN COOKED AND RECOVER WITH CLOTHS
STORE IN COOL PLACE
WHEN REQUIRED RE STEAM FOR 3 HOURS
