CHRISTMAS CAKE
9” Tin
3lb Dried Fruit (Currants Sultanas Raisins)
3/4lb Cherries and Mixed Peel
1/4lb Almonds
2 teasp. Mixed Spice
Grated Lime/Orange
3/4lb Butter
3/4lb Dark Sugar
6-8 Eggs
1lb Flour
Salt
Lime Juice
Little Milk
Sherry /Brandy
Mix Fruit and Sherry and leave for 3 days
Add all, except eggs and mix
Add beaten eggs one at a time
Put Gooey/Sticky Mix into 9”cake tin
Hollow middle to form centre
Cool Oven Mk 2 for 2 hours
Then Mk1 for 4 hours at least
Halfway through cover with greaseproof paper
Turn out onto wire tray
Almond Paste and Icing sugar with decorations???
