HOME MADE MARMALADE

 We made it at New Year 2010 and its very nice

 INGREDIENTS

 8 Kgs Oranges ( Thai Sweet Orange )

1 Kgs Navel Oranges

8 Limes

12kgs Sugar

8 litres water

35 lbs of used jam jars with screw lids

Very large pan or jam making pan

 

Suggest you divide the quantities and make half and half

Or make half the quantity

 

 

Cut fruit in half and squeeze out the juice

Save the pips and put in muslin bag or new dish cloth

Cut the fruit in small pieces

Add juice, fruit and bag of pips to the pan with the water

Boil for an hour. Don’t overboil just boiling or simmering.

To reduce by 1/3rd

Take off heat add sugar but squeeze and remove bag of pips

Reheat and stir in sugar

Continue to boil until setting point is reached.

Sterlize jars jn a cool oven after washing in warm water

Boil lids

When marmalade ready fill jars to full and seal with tight lid

 

Best on homemade bread.
