2  KILOS RIPE (WELL CLEANED (WASHED IN SALT) TOMATOES,CUT INTO QUARTERS,. (REMOVE STALKS,LEAVES AND BLEMISHED PARTS)

BOIL IN ENOUGH WATER TO  PREVENT BURNING IN COVERED PAN UNTIL SOFT

SIEVE/RUB PULP THROUGH FINE MESH TO EXCLUDE ALL BUT JUICE  (STAINLESS STEEL IF POSS) (REMOVE SKINS IF DESIRED)

TO PREPARED FRUIT JUICE-- APPROX ONE LITRE OF JUICE TO 2 KILOS OF TOMS

ADD  25 MGS SUGAR  per LITRE

ADD +/- 200MLS BOILED WATER PER LITRE

I TEASPOON LIME JUICE OR VINEGAR

1 TEASPOON SALT PER LITRE

SHAKE OF PEPPER

REHEAT MIXTURE STIRRING

BOTTLE IN STERILE KILNER JAR OR SEAL TOPPED JAM JAR, (LEAVING SMALL SPACE UNDER SCREW CAPPED JAR).

(ADD WORCESTER SAUCE TO TASTE)

 

TIP-- WE BUY JUST THE VERY GREEN TOMATOES IN THE MARKET 10-12BHT /KILO

AND LET THEM RIPEN TOGETHER, IN THE OPEN ON A TRAY, SO WE HAVE A UNIFORM

COLOUR AND TEXTURE WHEN MAKING THE JUICE.
