½ KG CARROTS
250gms LEEKS OR CELERY OR MIXED
50gms BUTTER
500MLS STOCK
HERBS AND SALT AND PEPPER
 
MELT THE BUTTER IN LARGE SAUCEPAN
ADD ALL VEG EXCEPT POTATO
COOK UNTIL SOFT – 10 MINUTES?
 
ADD POTATOES HERBS S& P
AND STOCK.
 
BRING TO BOIL AND SIMMER FOR ONE HOUR
 
SERVES 4 AS IS OR PUT THROUGH BLENDER WITH OTHER GREEN VEG
 
 AS FILLER BETWEEN MEALS OR ON ITS OWN OR AS A STARTER.
 
IT WILL KEEP THREE DAYS IN THE FRIDGE
