RED BERRY PAVLOVA
4 Large Eggs
225gms/8oz Caster Sugar
2 Teaspoon Cornflour
I teasp White Wine Vinegar
400ml/14Floz Double Cream
450gm/16 oz Rasperries/Strawberries/Redberries
Preheat Oven- Gas 1 140C
Whisk Egg whites until soft peaks form
Add Sugar continue to Whisk – glossy and smooth
Whisk in Cornflour and Vinegar
Line a baking tin and spoon in the mixture
Bake for 10 minutes then turn down the heat to lowest setting and leave for 2-3 hours until crisp but uncoloured.
Remove and cool
Fold half Fruit into the Cream
Spoon into the centre of the merinque
Top with remainder of the fruit and
ENJOY
